Oh. My. Gosh! These breakfast quesadillas are WONDERFUL! They are easy to make, cute, and fun for kids! I came up with this idea by... well, thanks to my husband's quesadilla dinner idea, I was able to come up with this fun breakfast. Check out my chicken quesadillas for the dinner version of this recipe. I originally had ingredients to make freezable breakfast burritos, so my husband could have a good breakfast every morning on his way to work; however, after him dipping into the tortillas --and using them for dinner the previous night-- I had only two tortillas left. Yep, that's right two! I wanted to still do something creative for breakfast, since my husband had the day off. I thought, why not turn this dinner quesadilla into a breakfast quesadilla! Genius. A little side note, I was originally going to put hash browns in the quesadillas, but I forgot to put them in the tortilla during assembly. We ate them on the side. If you want to add hash browns into your quesadilla, do it! It will be delicious. First, get the bacon started. It takes the longest. We cook the whole package because it broils or warms nicely for another day. I add 1TBS of vegetable oil to the bacon pan, just to get it started. You can use any oil you want, that is just what I had. After that, I use the bacon grease to cook the remaining pieces. I would also suggest to have a plastic jug or bottle handy, so you can dump the bacon grease into the bottle. I usually do this step one or two times while cooking, just to clear the pan from excess grease. For the bacon, I use thick cut bacon and do not add any seasoning to it. The bacon is already salty for me, and with adding the other ingredients to the dish, I do not believe it needs seasoning. Add more, if you like. I add four pieces of bacon at a time to the pan, so they have enough room to cook. I know my bacon looks a little burnt. My husband LOVES crunchy bacon, so I cook the bacon a little longer. You can cook your bacon to your desire, it will be all the same in the end.
While the bacon is still cooking, get your other ingredients together. You will want to take your tortillas out from the fridge and grate your cheese. The tortillas we used this time are La Tortilla Factory low carb tortillas. They are not as floury and heavy as the regular tortillas. They can be a little pricey depending on where you go. They are really good though and my husband liked them! So, it's a win! Again, you can use which ever type of tortillas you like, but make sure they are large enough to put a lot of ingredients inside them. You will also want to prepare your grated cheese during this time. We buy the block sharp cheddar cheese. My husband is a cheese fanatic, so we use a lot of it. The block cheddar lasts longer and you can slice it or grate it without buying more. There are two size options for this block cheese also. So if you are trying to save a little money, they have the smaller one for half the price. I grate my cheese over a bowl. I lay the cheese grater over the bowl and grate my cheese straight into the bowl. This cuts down on counter mess and alleviates the step where you might put the cheese into a bowl anyway. Whichever way you grate your cheese, works.
This recipe is adaptable. You can use egg whites or whatever type of breakfast meat you prefer. You can use a little cheese or a lot of cheese. It is all your preference. Assemble each quesadilla the same! Enjoy! Breakfast Quesadillas Servings: 1. Cook more depending on amount of servings desired.
Time: 30 min to 1 hour Ingredients: 2 eggs 2-3 slices of bacon 1 Tortilla 1/8-1/4 Cup Greek yogurt 1/4-1/2 Cup Shredded cheese 1 Tbs oil Directions: 1. Warm a pan with 1 TBS oil. Make sure the pan is hot. 2. Add 4 slices of bacon to the pan at a time. Cook all the bacon in the package. Set aside. 3. While bacon is cooking, get out tortillas and shred desired amount of cheese. 4. When bacon is almost finished, scramble 2 eggs in a nonstick skillet pan. Remove from pan. 5. While eggs are scrambling cut, or tear, apart 2-3 strips of bacon into smaller pieces. Assembly: 1. Place tortilla in nonstick pan. 2. Cover the whole tortilla with desired amount of shredded cheese. 3. Add eggs and bacon pieces to one side of the tortilla 4. Fold tortilla in half and cook for 15-30 seconds, until the bottom is golden brown. 5. Flip tortilla seam side down, and repeat step 4. 6. Remove quesadilla and put on a plate. 7. Cut into triangles. 8. Add a scoop of Greek yogurt for sour cream replacement (or add another sauce, instead).
